Ingredients:
• 2 slices of wheat bread
• 2 slices of crisp tomato
• 2 spinach leaves
• 1 ring of onion
• Approximately 1.5 tablespoons balsamic vinaigrette*
• Dash of “Italian Seasoning” spice
• Parmesan cheese
* For low fat option, substitute Fat-Free Italian.
Directions:
1. Toast the bread and cut each slice into six squares.
2. Cut tomato and onion into small pieces, place in one Cowles Bowl.
3. Rip up spinach leaves with bare hands, place in bowl.
4. Add dressing and Italian Seasoning to bowl and mix until thoroughly saturated.
5. Scoop mixture onto bread squares.
6. Sprinkle with Parmesan cheese.
7. Consume!
