Ingredients:
• 2 slices of bread (preferrably 12-grain or wheat)
• An assortment of cheese (at least two slices)
• 4 slices tomato
• 4 slices red onion
• 1 tsp. olive oil
• Red pepper flakes
• Pepper
Directions:
Toast the bread. While the bread is in the toaster, put tomatoes and onion in a bowl and add a little olive oil. Put in the microwave for 30 seconds.
Put toasted bread on a plate and top with cheese of your choice (picture shows one slice with provolone and one with muenster, with half a slice of cheddar added to each).
Put two tomato slicess and two onion slices on each piece of bread, then microwave for 15 seconds (or until cheese is melted).
Sprinkle with red pepper flakes and black pepper. Parsley, basil and oregano are also good if they are available.
Eat open-faced with a fork ... or risk messiness and potential melted stringy cheese embarrassment by folding into a sandwich and eating with your hands.
This is great with tomato-based soups or salad.
